The Perfect Breakfast Taco

I seriously love Mexican and could eat different variations all day long. But breakfast has to be one of the best ways to enjoy a taco. Fill up a tortilla or lettuce cup with any combination of eggs, hash, sausage, and fresh toppings. The version pictured below - simple, quick, and clean!

Serves 1-2
Breakfast Taco Fillings:

3-4 eggs scrambled.
2 Tbls water
Salt and Pepper
Pinch of cayenne, adobo seasoning, or chipotle chili powder.

To eggs add water and seasonings and mix well. In a skillet over low to medium heat, cook your eggs until cooked through.

Toppings:
Fresh Cilantro
Tomatoes chopped
Avocado cubed
Butter lettuce cups or Sieté tortillas

Additional options:
Sausage or bacon cooked and crumbled
Roasted Sweet Potatoes
Breakfast hash of potatoes, onion and bell peppers


Prep all your ingredients.
For Whole30, use butter lettuce cups.
Paleo, warm your Sieté tortillas.

Fill lettuce cups or tortillas with eggs and top with your favorite toppings + a splash of hot sauce for some extra heat.
