Grilled Flank Steak Tacos
I'm super happy with good ol' ground beef tacos or salsa chicken tacos. But every once in awhile we've got to take it up a notch around here and get fancy!! So marinated flank steak it is! Oh yea! Is that actually fancy? Not sure but it tastes amazing so we'll go with it! After marinating for 24 hours Kevin grilled up the flank steak on the Big Green Egg which is always a slam dunk! Siete Tortillas are my go to when not doing Whole30. If you're doing Whole30, fill up a lettuce cup or red cabbage leaf with all this goodness!
Flank Steak Marinade:
1/4 c olive oil
2 Tbls apple cider vinegar, rice wine vinegar
1 lime juiced
2 tsp pepper
2 tsp salt
1 tsp chipotle chili powder
1/4 c cilantro rough chop
3 clove of garlic minced
1/2 jalapeño minced
1 Flank Steak 1-2 lbs
Combine all ingredients in a gallon size zip lock bag or a larger glass baking dish. Let steak marinate overnight or at least 8 hours. Turn the steak several times throughout the marinating process.
Grill your steak to desired doneness.
Slice into thin strips against the grain.
For Tacos:
Butter Lettuce Cups or Sieté Tortillas warmed
Red onion diced
Avocado chunked
Jalapeño dice
Roasted Sweet Potatoes
Tomatoes chopped
Thin sliced red cabbage
Fresh cilantro rough chop
Lime slices
Trader Joe's Hot Sauce or other compliant Whole30 hot sauce
To assemble:
Slice your flank steak into think strips. Layer Steak and all your favorite toppings: onion, tomatoes, jalapeños, cabbage, roasted sweet potatoes, and avocado. Top with your favorite compliant hot sauce, a squeeze of lime and enjoy!
