Grass Fed Ground Beef Sliders with Sweet Potato Buns
Serves 4-6
1-2 lbs of grass fed ground beef
2 tsp salt
2 tsp pepper
Any additional seasoning you’d like.
2 Japanese Sweet Potatoes/large, round and fat for good buns.
Fav burger toppings:
Lettuce, onion, caramelized onion, tomatoes, avocado, sautéed mushrooms, bacon, red cabbage, etc.
Compliant mayo, ketchup, mustard, bbq sauce. Check out my favorites below!
Sweet Potato Buns
Instructions:
Slice into 1/2 inch rounds and place on a parchment lined sheet pan. Roast dry at 425 degrees for 15 mins. Flip sweet potatoes and roast for another 10-15 until tender and nicely finished on both sides.
Sliders
Instructions:
Season the meat with salt, pepper and any additional seasonings of your choice (garlic, onion powder, etc). Form into small 4 inch burger patties about 1/2“ thick and put a “dent” in the middle of the burger with your thumb. Or size up your sweet potato rounds and make burgers to fit those!
Grill or sauté burgers toward the last 10 minutes of the sweet potatoes roasting. Cook to desired doneness.
Layering suggestion:
Sweet Potato Bun
Place a piece of lettuce on the bun.
Add a little mayo, bbq sauce, or avocado on the lettuce.
Place a slider on top.
Add any additional toppings.
Optional: add an additional bun to top it off. We prefer ours open face!
Best eaten with fork and knife.
Great paired with:
Veggie Crudités: cucumbers, carrots, cauliflower, jicama with favorite compliant dips or dressing. Could use guacamole, tahini, compliant ranch, etc.
Plank fries
Cut your potatoes into large planks. Toss in olive or avocado oil and season with salt and pepper, and any additional flavors you like. Roast on a parchment lined sheet pan at 425 for 15 minutes. If they’ll stand up on their skin side arrange them skin side down for roasting. Check potatoes, rearrange as needed. Roast for an additional 10-15 minutes until golden and cooked through. If you want them a little crispy, turn the broiler on and allow them to finish for a few minutes under the broiler. Watch closely. They’ll cook fast at this point. Adjust seasoning as needed.
