Chicken Salad Two Ways

Rotisserie Chickens are one of my favorite go to’s for ready made healthy protein and easy meals throughout the week. These two chicken salads are some of my family’s personal favorites. A handful of ingredients plus Primal Kitchen’s Avocado mayo and their Chipotle Lime mayo are what bring these two salads all together.

Above photo is the Chicken pecan with grapes and avocado. There’s also a Chipotle Lime version with chicken, bell peppers, pineapple, jalapeño and red cabbage! Both are amazing in their own way!

And if you’ve been looking for a clean mayonnaise, Primal Kitchen is hard to beat! The regular mayonnaise is great for dishes like this but it is also a great base for dressings, tartar sauce, dips and more. The chipotle lime is a family favorite ~ also great for sauces, dips, and salads.

Here’s the original Chicken Pecan Salad!

Chicken Pecan Salad:

1-2 C Rotisserie Chicken
1 / 2 C grapes halved
1/4C red onion sliced into thin strips or diced
1/2 C jicama small chop
1/4-1/2C Primal Kitchen Mayo S&P
1/2 avocado somewhat firm cut into small chunk
1/2 C pecans toasted and chopped
Butter Lettuce or Romaine Lettuce leaves
Lime wedges

Mix chicken, grapes, onion, jicama, good squeeze of lime juice, S&P, and Mayo together until well combined. Gently fold in avocado and pecans. OR Sprinkle the pecans on top to guarantee crispness! If you fold them in and then have left overs they will soften a bit. I prefer them crispy so I add them just before eating. Taste ~ add more mayo if desired, adjust seasonings to taste including another squeeze of lime to brighten the flavors if needed. Lay out 3-4 lettuce leaves and fill with Chicken mix. Sprinkle with additional pecans and a dusting of pepper if desired. Enjoy!

Chipotle Lime Chicken Salad

1-2 C Rotisserie Chicken chunked
1/4 C each red and green bell pepper small chop
1/2 C red cabbage thinly sliced then medium chop
1 scallion sliced
1/2 jalapeño diced (opt//omit if you don’t want extra heat)
1/4-1/2 C Primal Kitchen Chipotle Lime Mayo has some good heat so start with less.
S&P
1/2 C pineapple small chop
Cilantro
Butter Lettuce or Romaine Lettuce leaves
Lime wedges

Mix Chicken, peppers, cabbage, scallion, jalapeño, S&P, and chipotle lime mayo together until well combined. Lay out 3-4 lettuce leaves and fill with chicken mix. Finish with a sprinkle of red cabbage, pineapple, and cilantro and a squeeze of lime over the top to finish it off. **The measurements are flexible. As you assemble the salad add more or less of each ingredient according to personal preference. Also these are both very versatile ~ use what you have on hand. Apples/blueberries/mango would be good in the Chicken Pecan. Any combo of peppers, onion, jicama, etc would be good in the Southwest!
