Easy Homemade Mayo
My favorite go to brand for store bought mayonnaise is Primal Kitchen’s Mayos! They are amazing. And somewhat spendy. I always try to grab it while on special, or buy from Thrive Market which has great prices, because it really is the best store bough mayo in my opinion. But when I don't have any on hand this is my go to recipe in a pinch. This recipe is very affordable and is really versatile for making other dipping sauces and cream based salad dressings using this easy mayo recipe as a base. All you need is a handful of ingredients and an immersion blender! Check it out!
Easy Homemade Mayo
Ingredients:
1 C of NON extra virgin Olive Oil
Or
3/4 avocado oil
*Trader Joes has a great plain olive oil. Avoid virgin or extra virgin due to it’s bitter taste.
1 egg
1/2 tsp ground mustard seed
1 tsp salt
1/2 medium lime squeezed or 1/2 small lemon squeezed. I prefer lime over lemon. Add more to taste.
Instructions:
Place all ingredients in a wide mouth 16oz mason jar. Using an immersion blender, sink the blender to the bottom and begin to blend. Slowly pull the blender up as you see the mayonnaise beginning to emulsify.
Adjust seasonings to taste and store in the fridge for 1-2 weeks.
Variation:
Chipotle Lime Mayo. If you like a little heat, this is the best ever.
Ingredients:
1/2 c of Easy Mayo
2-3 tsp of Chipotle Chili Powder seasoning OR if not doing Whole30 use 1 Chipotle Chili Pepper in adobo sauce.
1/2 tsp pepper
Extra squeeze of lime juice.
Use a fork to mash up the Chipotle Pepper. Mix all ingredients well and adjust seasonings. If it’s too spicy, just add a spoonful of regular mayo to mellow it out. If not spicy enough, add more chipotle chili powder or additional whole peppers + adobo sauce.
Use as a dipping sauce for tostones, on lettuce wrap burgers, Chipotle Lime Chicken Salad, potato wedges, veggies, on scrambled eggs, etc. So many possibilities.
