Mango Nectarine Crumble

There is just something about the sweetness of fruit, the tart of lemons, and the delicious combination of almonds, pecans, and dates with a pinch of sea salt. And all combined together in one delicious and beautiful dessert….it’s a flavor party on your palate! This is one of my family’s favorite desserts. A bit of prep but worth every step! You’ll love it and you’ll feel great after eating it!

This is a purely raw layered dessert. Nothing baked and nothing extra added. This recipe calls for mangoes and nectarines but the fruit can be switched out. You’ll find suggestions for other options below. Follow this as is or have some fun trying different combinations. Enjoy!

Mango Necatrine Crumble

Crust:
1/2 Cup of Almonds
1/2 Cup of Pecans
1 Cup of pitted dates
Pinch of Cinnamon

In your food processor using your S blade, blend all 4 ingredients together until nuts are well chopped but still give some texture and crunch. The end product is really a personal choice. If you like a little more crunch blend for less time and leave larger chunks of nuts. If you want a more smooth crust, blend longer until the nuts are tiny crumbles. 

Fruit:
4-6 Mangoes pitted, peeled, and chopped into 1/2” chunks
3-5 Nectarines chopped into 1/2” chunks
Squeeze of lemon
Toss chopped fruit and squeeze of lemon together until well mixed.

Sauce:
1 1/2 cups of the chopped mango and nectarine mix 
1 Cup of pitted dates
Squeeze of Lemon

Place all ingredients in a VitaMix or high speed blender. Blend until smooth. Adjust to taste: add more lemon juice for a more tart sauce. The dates make the crumble very sweet so if you would like a more tart presence, bring it out in the sauce via the lemon.

To Assemble:
You can use stemless wine glasses, small mason jars, or ramekins and simply layer the ingredients as follows:

Crust, Fruit, Sauce, repeat

Top it off with a little more crumble and a sprinkle of Unsweetened Shredded Coconut (opt).

NOTE:
Other fruits to try: strawberries, peaches, pineapple, apples (small chop).
The amount of ingredients you use for each layer and the number of desserts you will end up with will depend on the size of your serving dish: 

Stemless Wine glasses: 2-3 Servings
Ramekins//Small Mason Jars: 4-6 Servings
