Beef Picadillo

So many amazing flavors in one dish! Rich seasoned sauce, grass fed beef, green olives, and currants. And, yes, they all taste amazing together! This is easily one of my favorite go to dinners. We eat it over sweet potatoes or cauliflower rice most of the time. But its equally amazing over regular rice if you’re all about those grains! Want to take it up a notch? Throw in some homemade Tostones as a side!

Ingredients:
1 lb grass fed ground beef
1/2 yellow onion chopped
3 medium cloves of garlic minced or pressed
1/2 green pepper chopped
1 can fire roasted diced tomatoes
2 -4 T tomato paste
1/4 c beef bone broth
2 T oregano
3 tsp salt
1 tsp pepper
2 tsp cumin
2 tsp paprika
2 tsp chili powder
1/2 cup green olives left whole or cut in half
1/4 cup currents

Additional toppings:

Lettuce, thin sliced red cabbage, jalapeño slices, red onion, guacamole or avocado sliced, and cilantro.

Instructions:

Brown ground beef for about 5-10 mins. Add onion and garlic, season with salt and pepper and continue browning. Once browned add green peppers and cook for an additional 5 minutes. Add remaining ingredients, stir well, allow to simmer for 20-30 mins over low heat.

Serve over cubed roasted sweet potatoes, cauliflower rice, or eat as is with Tostones. Hearty, warm, lots of flavor.
